Buffalo Chicken Meatballs


2 lbs Ground Chicken
½ c Finely Grated Zucchini
½ c Grated Celery
½ c Grated Onion
1 tsp Garlic Powder
1 ¼ tsp Sea Salt
3 Egg Whites Beaten
1 c Frank’s Red Hot
Walden Farms Blue Cheese for dipping


  1. Preheat 350F
  2. Combine Chicken, Vegetables, Spices, Beaten Egg Whites and 2 tsp of Franks. Gently mix by hand the ingredients DO NOT SQUEEZE
  3. Spray a baking sheet with Olive Oil
  4. Form into meatballs into a 2 tsp size meatball
  5. Bake Meatballs for 15 minutes
  6. Transfer meatballs to mixing bowl, pour wing sauce in, and toss to coat
  7. Turn Oven to 450F
  8. Transfer Meatballs onto a clean baking sheet
  9. Bake for additional 12-15 minutes
