Roasted Garlic Dressing


2 Tablespoons French shallots, chopped
1/3 cup apple cider vinegar
1 teaspoon Dijon mustard
1/2 teaspoon salt
pinch white pepper
1 egg white
6 garlic cloves
1 cup olive oil


  1. Preheat oven to 360 degrees
  2. Roast garlic cloves until softened and lightly browned (about 20 minutes)
  3. Chop French shallots
  4. Combine all ingredients except oil into a blender
  5. Start to blend – while blender is running, add oil in a thin stream until emulsified
  6. Serve roasted garlic vinaigrette immediately
