Stuffed Bell Peppers


2Lb. Ground Turkey (or Chicken)
1 Large Zucchini Diced
1/4 Head of Cabbage Diced
4 Scallions Chopped
1 Cup Chicken Broth (or Vegetable)
6 Bell peppers seeded


  1. Brown Turkey in Tbsp Olive Oil until browned
  2. Add Zucchini, Cabbage, Scallions, 2/3 Broth and season to taste with Garlic Salt and Pepper
  3. Cut tops off Peppers and clean out the seeds, then microwave for 3 minutes on high
  4. Fill Peppers with Mix
  5. Place in an oven safe dish add remaining 1/3 cup of broth to bottom of dish
  6. Bake at 350 F for 35 minutes
